What Transition in the Food System in Bourgogne – Franche-Comté? Supplying Institutional Catering through Short Food Supply Chains
The current food system is reaching the limits of sustainability on environmental, economic and social points (Rastouin, 2024). In France, the 2007 Grenelle de l’environnement environmental summit promoted the introduction of short, local food circuits. But end demand remains too limited, so public authorities are using the lever of collective catering to reterritorialize the food system and improve the nutritional quality of food. The aim of this paper will be twofold: 1) how collective catering has activated organized and geographic proximity? Has this activation contributed to the spread of innovation? 2) Has reterritorialization contributed to creating risks of territorial inequalities? We used the databasis “Agrilocal” and our results show that the spread of innovation remains limited in Bourgogne franche Comté, and that Covid has slowed the transition of the food system.
